Description
In previous builds, the SSL-pinning was semi-visible, ie the app showed the user it was making a connection, but how/why was relatively opaque. Will you go back to providing the SSL-pinning visibly, and if so, how will the user know if the pinning is NOT successful? what error message will be provided?

Up to you. It will show an error if there is a problem. If everything is successful, no error.

It would be great if there is a toast message* on screen. It could say: "SSL Connection Successful!" and then fade away after 3 seconds.
It would be nice to let users know that they are using a secure connection. I think returning to the text that appeared in the tray before would be confusing to most, and only shows you what is happening.
*Toast Message: a simple text message that appears on-screen for a short time and then disappears automatically. For example, Gmail shows a toast message when a message the user has composed is being sent. I.E. you've clicked send. It will say "Sending message..." The benefit it is it won't stop the user from moving forward, but lets them know that yes, something did successfully happen.
